
Onion-Stuffed Hamburg Steak with Plenty of Spring Onions
A hearty stuffed hamburg steak made by hollowing out spring onions into cups, filling them with meat, and slowly steam-frying them with a lid on. The scooped-out onion is mixed into the meat and also cooked alongside to become a Japanese-style onion sauce. The tender meat mixture uses no egg, relying instead on mayonnaise and panko, and pairs perfectly with the sweet, melt-in-your-mouth spring onions. Finished with cheddar cheese and black pepper, it makes a dish that goes wonderfully with rice.

Cut off the top and bottom of the spring onions, halve them crosswise, and peel. Push out the center portion to remove it, leaving about two outer layers to form cups. Make 4 cups total from 2 onions.
