    Marinate the chicken thigh. Rub in a simple marinade of just grated ginger, to remove any odor, and soy sauce. Do not use sake, since you want as little moisture as possible. After rubbing it in, let it sit for a while to absorb.

    Peel the potatoes and cut them into about 8 pieces. May Queen potatoes are used here (Danshaku or other varieties also work).

    Coat the chicken in potato starch. Once evenly coated, pat off any excess.

    Shape each piece into a round by wrapping it in the skin, so the skin crisps up nicely. Let it rest in this state for a while to let the starch settle.

    If there is moisture on the surface of the cut potatoes, wipe it off with a paper towel, then add oil and toss quickly.
