Shoyu Ramen (Homemade Soup)

A home-style shoyu ramen where the soup, the heart of any ramen, is made simply by warming water in a pot with seasonings such as soy sauce, garlic powder, and Weipa (Chinese soup base). An alternative recipe is also introduced for when Weipa is unavailable (Lee Kum Kee chicken stock, sesame oil, oyster sauce, and more). Boil the noodles according to the package directions, add them to the soup poured into a bowl, and finish with your favorite toppings such as chashu, seasoned egg, green onion, chili pepper, and menma.

    Gather the ingredients for the soup, the most important part of ramen. With soy sauce, garlic powder, Weipa, and water, you can make the soup.

    If you cannot get Weipa, prepare Lee Kum Kee chicken stock powder as a substitute. The taste is slightly different, but the flavor comes close.

    Measure out the alternative soup blend. Combine 1 teaspoon soy sauce, 1 1/2 teaspoons chicken stock powder, 1 teaspoon sesame oil, 1 1/2 teaspoons oyster sauce, 1 teaspoon garlic powder, a pinch each of salt and sugar, and water.

    Put all the soup ingredients in a pot and heat to warm through.

    Once the ingredients have completely dissolved, the soup is done.

    Boil the noodles. Follow the boiling time on the package (these noodles take about 2 to 2 1/2 minutes).
