Akasaka Szechwan Restaurant's Traditional Staff-Meal Napolitan

A staff-meal Napolitan taught by Kentaro Chen of Akasaka Szechwan Restaurant. The key is to make the sauce first: briefly stir-fry grated garlic, ginger, and doubanjiang to bring out their aroma, then build depth with tomato, ketchup, butter, and oyster sauce. The pasta is boiled longer than usual in well-salted water and then chilled, a make-ahead method that seasons the noodles themselves before they are stir-fried with the other ingredients. Chinese cooking technique shows through at every step.

INSTRUCTIONS

Instructions

  1. 1

Boil the pasta. Add 10-15 g of salt per 1 L of water, boil longer than usual, then rinse in cold water and set aside. Seasoning the noodles well helps the sauce cling to them.

    2:52~15 min
  2. 2

Cut the ingredients. Slice 1/4 onion 2-3 mm thick, and cut the green bell pepper so it isn't too thin, to keep its texture.

    3:41~3 min
  3. 3

Slice the mushrooms thickly so their texture comes through. Maitake, shiitake, or any mushroom you like also works.

    4:53~2 min
  4. 4

Cut the tomato roughly into cubes, since it goes into the sauce. Cut the wiener sausages into bite-sized pieces as well.

    5:25~2 min
  5. 5

Make the sauce. Put the grated garlic, grated ginger, and doubanjiang in a frying pan and stir-fry briefly to draw out the aroma and depth of flavor.

    6:40~2 min
  6. 6

Add the tomato and cook it through for a fresh note. Then add the ketchup and stir-fry together.

    7:41~3 min
  7. 7

Add butter, then season with sugar, white pepper, and oyster sauce to finish the sauce. Taste and check the balance of heat and umami.

    7:51~3 min
  8. 8

Melt butter in a separate frying pan and stir-fry the onion to bring out its sweetness and aroma.

    10:07~3 min
  9. 9

Add the wiener sausages and stir-fry, then add the mushrooms and green bell pepper. Cook the pepper lightly enough that it could almost be raw, to keep its texture.

    10:31~3 min
  10. 10

Season the ingredients with just a little salt and pepper.

    11:18~1 min
  11. 11

Add the pre-boiled noodles and stir-fry, tossing them with the other ingredients.

    11:34~2 min
  12. 12

Add the sauce you made earlier and blend everything together, tossing to emulsify rather than stir-frying. Plate and finish with grated Parmesan cheese.

    11:55~3 min
