Make several cuts along the line between the lean meat and the fat of the 2 slices of pork loin (tonkatsu-cut) to sever the sinew.
0:11~2 minCover with plastic wrap and pound with a rolling pin until the meat is stretched to about 1.2 times its original size.
0:19~2 minPlace the pork in a resealable bag.
0:28~1 minAdd the sake, salt, curry powder, Worcestershire sauce, and garlic, and massage into the meat.
0:30~2 minPress out the air, seal the bag, and let it rest for about 30 minutes to let the flavors soak in.
0:41~30 minPrepare the potato starch, lightly wipe off the marinade, and coat the pork.
0:46~2 minPour vegetable oil into the pan to a depth of about 1 cm and heat to 180°C.
0:51~3 minAdd the pork and fry for about 2 minutes until the coating sets, then flip it over.
