Plenty of homemade grated garlic goes into the marinade, the seasoned meat is warmed briefly in the microwave, then coated in potato starch and rice flour and fried at high heat. The rice flour coating turns out thin, crisp, and light, so you can keep eating it forever.

    Take the chicken thigh from the fridge and put it in a bowl.

    Add a generous heap of grated garlic, about half a large spoonful. Use homemade garlic paste made by mincing peeled garlic in a food processor and mixing in vegetable oil and salt.

    Add a little generous amount of soy sauce, then add sake. Since plenty of soy sauce went in, keep the sake modest.

    Finally, add sugar to season it slightly sweet, like Hokkaido zangi.

    Microwave the whole bowl at 600W for about 30 seconds, then mix well.

    Heat for another 30 seconds. It gets quite hot, but aim for just short of cooking the meat through.

    Add about 3 tablespoons of potato starch and toss to coat.

    Fry once in very, very hot oil.
