Avocado Hamburg Steak with Wasabi Sauce, White Stew Pot Pie, and Snow Salad

Avocado Hamburg Steak with Wasabi Sauce, White Stew Pot Pie, and Snow Salad

A Christmas dinner that's an extension of everyday cooking, made by using up the ingredients left in the fridge. Three dishes: avocado hamburg steak topped with wasabi sauce, a pot pie of head-on shrimp and turnip in white stew wrapped in puff pastry, and a yogurt salad with apple and chicken tenderloin. Soy milk replaces heavy cream and milk, and sliced bread stands in for breadcrumbs.

INSTRUCTIONS

Instructions

  1. 1

Separate the turnip into the greens and the white part. Peel the white part and cut it into 8 pieces.

    1:18~3 min
  2. 2

Peel the head-on shrimp by hand, then remove the vein with a toothpick.

    1:35~5 min
  3. 3

Melt butter in a pot and sauté the onion until soft. Add the shrimp and cook briefly, then season with salt and pepper.

    1:57~8 min
  4. 4

Add the white part of the turnip and the turnip greens, pour in water equal to half the volume of the ingredients, and simmer until the turnip is tender.

    2:33~15 min
  5. 5

Prep the salad. Thinly slice the mushrooms, cube the apple with the skin on, and cut the potato into small cubes and heat it in the microwave.

    3:00~10 min
  6. 6

Coat the chicken tenderloin with shio koji and heat it in the microwave to make tender steamed chicken. Combine the apple, potato, chicken tenderloin, and mushrooms, and dress with yogurt.

    4:05~10 min
  7. 7

Knead the ground meat blend well ahead of time. Soak the sliced bread in soy milk to soften it.

    4:57~5 min
  8. 8

Add the sautéed onion, the softened bread, egg, and nutmeg to the meat and knead until sticky. Shape the patties and press out the air.

    5:30~8 min
  9. 9

Heat olive oil in a frying pan and cook the hamburg steaks. Sear the surface well, flip gently, and cook through. Top with cheese, cover, and let it melt.

    6:26~12 min
  10. 10

Add soy milk to the stew and simmer until thickened, taking care not to let it boil over.

    6:54~10 min
  11. 11

Roll out the partially thawed puff pastry a little larger than the dish. Lay it over the dish filled with stew, press the edges with a fork to seal, brush with the reserved egg, and bake until golden.

    7:13~15 min
  12. 12

Cook the garnishes in the pan used for the hamburg steaks and make the wasabi sauce. Arrange the tomato and avocado on the plate like a tree, spoon the wasabi sauce over the hamburg steaks, and finish with herbs.

    8:15~8 min
