The Boss's Youthful Onion Fried Rice

Staple · Rice Dish · Washoku15 min(Prep 5 min + Cook 10 min) · 600 kcal per serving · 1 serving · Easy

A fried rice made with nothing but onion, katsuobushi, and rice, inspired by the poor man's meals that appear in Makoto Shiina's novels and made ever since out of admiration for them. The key is to use plenty of onion and to press the rice down and sear it rather than stirring it. The fragrant sweetness of the onion pairs beautifully with soy sauce and katsuobushi.
