Firefly Squid and Spring Vegetable Peperoncino Spaghetti

Firefly Squid and Spring Vegetable Peperoncino Spaghetti

A Japanese-style peperoncino combining seasonal firefly squid with spring cabbage and new onion, with fish sauce as the secret ingredient. Carefully removing the firefly squid's eyes, beaks, and cartilage gives a pleasant texture, and the aroma of garlic and chili is layered with the umami of fish sauce.

INSTRUCTIONS

Instructions

  1. 1

Prepare the firefly squid. Set out a bowl of water and use tweezers to remove the eyes, beaks, and cartilage. Remove them carefully, as any left behind will spoil the texture.

    0:24~15 min
  2. 2

Soak the garlic in water, peel it, and slice. Also prepare the dried red chili.

    3:02~3 min
  3. 3

Slice 1/4 of a new onion, and wash the spring cabbage and cut it into long pieces so it clings to the noodles.

    3:26~5 min
  4. 4

Bring a pot of water to a boil, add 1 teaspoon of salt, and boil the spaghetti for 6 minutes as directed. Stir at first so it does not stick, and set aside a little of the cooking water partway through.

    4:40~6 min
  5. 5

Put 1 tablespoon of olive oil in a frying pan, add the garlic and the hand-crushed chili while the pan is still cold, and heat over low heat to draw out the aroma.

    6:06~3 min
  6. 6

Add the spring cabbage and new onion and stir-fry until everything is coated with the oil.

    6:54~3 min
  7. 7

Add the reserved pasta cooking water and 1 tablespoon of white wine, and season lightly with salt and pepper.

    7:37~2 min
  8. 8

Add the fish sauce for umami and aroma.

    8:15~1 min
  9. 9

Add the prepared firefly squid and simmer briefly to release their umami into the sauce.

    8:26~2 min
  10. 10

Add the boiled spaghetti and toss to coat it with the sauce. Taste and adjust with salt and pepper if needed.

    8:45~2 min
  11. 11

Plate the pasta, arranging the firefly squid on top to finish.

    9:24~2 min
