Instructions
Microwave the frozen udon to thaw.
Cut the napa cabbage, long scallion, nira, and garlic into bite-size pieces.
Cut the pork belly into bite-size pieces.
In a pot, combine udon, cabbage, pork belly, shiitake, and dashi, and place over heat.
Once boiling, add sake and mirin.
Add miso and adjust seasoning.
Add long scallion and garlic, and continue simmering.
Add nira, crack in the egg, cover until the egg is set, and serve.
