
Grilled Mackerel Sushi Onigiri
Grilled mackerel sushi-style onigiri made with an empty tofu pack as a mold, so there is no need to shape them by hand. Sushi rice mixed with pickled ginger and toasted sesame seeds is layered with pan-grilled boneless salted mackerel and shiso leaves, then pressed firmly. About 130 yen per serving, it keeps for 3 to 5 days refrigerated or about 3 weeks frozen, making it a refreshing summer recipe well suited to meal prep and Obon guests.

Combine 2 tablespoons sugar, 4 tablespoons vinegar, and 1 teaspoon salt to make the seasoned vinegar (sushi vinegar).
0:55~2 minPour the seasoned vinegar over 2 go (660g) of warm cooked rice and mix with cutting strokes until the vinegar is evenly distributed.
1:04~3 minOnce the vinegar is evenly distributed and the rice looks glossy, cover it with a damp cloth to keep it from drying out and let it cool until no longer hot.
