Onigiri wrapped around a soy sauce-marinated egg yolk, taught by Yumiko Ukon, proprietress of the onigiri specialty shop Bongo. The rice is simply rinsed rather than scrubbed, the steam is released after cooking so each grain forms a coating, and the rice ball is never squeezed—only shaped. A simple dish with few ingredients, made by freezing an egg, taking out the round yolk, and marinating it in soy sauce.

    Put the rice in a bowl, pour in water all at once, and stir lightly once, twice, three times. That completes the first round—drain the water.
