
Zucchini Roll Omelette

A roll-up made with a whole zucchini in season, mixed and pan-fried in one go. Julienned zucchini is salted, squeezed dry, and bound with egg and a little cake flour, then topped in the center with ham and sliced cheese and rolled up. The zucchini turns meltingly tender with each bite and pairs perfectly with the melted cheese. It works as a snack or a side dish, and costs about 200 yen and 15 minutes to make.
Instructions
- Cut 1 zucchini (150g) into julienne strips. A knife works, but a julienne slicer gets it done in less time.
- Sprinkle 1/2 teaspoon salt over the julienned zucchini and massage it in until it wilts and releases moisture.
- Once the zucchini has wilted and released moisture, squeeze it firmly by hand to remove the liquid.
- Put the squeezed zucchini in a bowl and add 2 eggs, 2 tablespoons cake flour, and 1/2 teaspoon granulated consomme.
- Beat the eggs as you mix, stirring well until no lumps of flour remain and everything is evenly combined.
- Grease a large 26cm frying pan with oil and heat over medium heat.
- Once the pan and oil are hot, pour in the batter and spread it over the entire pan.
- Once spread out, lower the heat to medium-low, cover, and steam-fry for 2 to 3 minutes until the egg sets.
- When the egg starts to set, place 2 slices of ham slightly past the center toward the back, and layer 2 slices of melting cheese on top.
- Fold the overhanging edges slightly inward to neaten the shape. Folding in both ends gives you a tidy rectangle.
- Being careful not to burn yourself, fold it over toward you from the back, flap by flap, into a roll.
- Once rolled, remove it from the pan, cut into bite-sized pieces, and arrange on a plate. Serve with ketchup if desired.
