
Stir-Fried Green Peppers and Egg

Seasonal green peppers are cut on the diagonal and seared to draw out their sweetness, then combined with fluffy, silky eggs cooked quickly in sesame oil. The seasoning is simply salt and garlic, yet the aroma of sesame oil and the punch of garlic give it an authentic flavor. The peppers are used whole, stems and seeds included, so prep is easy. A quick side dish you can make in about 5 minutes when you want just one more plate on the table.
Instructions
- Wash the green peppers well and cut them in half. Use the stems and inner seeds as they are.
- Cut the halved peppers into thin diagonal strips. Cut the rest the same way.
- Crack the eggs into a bowl, add salt, and beat them, cutting through the whites.
- Heat sesame oil in a frying pan, add the peppers, and spread them out evenly.
- Rather than stir-frying, think of it as searing: leave them mostly undisturbed and brown them well to bring out the sweetness of the peppers.
- Once they start to color, flip them over and sear the other side the same way.
- When they are browned and sweet, add the salt and grated garlic and toss everything together briefly.
- Push the peppers to the edge of the pan, add sesame oil to the open space, and heat it thoroughly.
- Pour the beaten eggs into the sizzling hot sesame oil, and once the edges begin to set, stir 2 or 3 times.
- Turn off the heat and fold the eggs and peppers together for a fluffy, silky finish.
- Serve on a plate and top with pepper and chili oil to taste.
