Trim the enoki bottoms, cut into 3 lengths, and break apart the bunch.
Slice the long scallion in big diagonal pieces.
Take the shirataki out of the bag, massage with salt and sugar, rinse, and cut into bite-size lengths.
Heat oil in a frying pan over medium heat and add the shirataki to stir-fry.
Once the moisture cooks off the shirataki, push it to one side, add the pork to the open space, and cook.
Once the pork is cooked, add the cut enoki and kimchi and stir-fry together.
Combine water, chicken stock granules, soy sauce, sugar, and miso, and stir to dissolve.
Add the cut scallion, mix everything, and simmer over medium heat.
Simmer 2-3 minutes until the shirataki absorbs the flavor and the scallion is cooked. Add sesame oil and stir.
Plate up and serve.
