Instructions
Combine the seasonings (soy sauce, mirin, and sugar) in a bowl and whisk thoroughly to make the sauce.
0:24~2 minOpen the firm tofu, drain off the excess water, and cut it into pieces of your preferred size.
0:32~2 minArrange the tofu on a plate and microwave at 600W for 2 minutes without covering. This warms the tofu while driving off moisture.
0:36~2 minAdd sesame oil to a frying pan. Pat the surface of the tofu dry with paper towels before adding it to the pan.
0:48~2 minSear the surface of the tofu over high heat until golden. If the pan starts to smoke, it is too hot, so lower the heat to medium and continue cooking.
0:59~3 minOnce it has a nice golden color, flip the tofu and sear the other side.
1:13~3 minOnce the other side is golden as well, turn off the heat once to prevent spattering. Add the prepared sauce, then return the heat to medium and simmer the tofu.
1:39~3 minAfter simmering for 2 to 3 minutes, flip the tofu once so the flavor penetrates evenly, and simmer the other side.
1:59~3 minWhen the sauce has thickened nicely, flip the tofu one last time and it is done.
2:40~1 minMound the steamed white rice slightly high in a donburi bowl and sprinkle katsuobushi over it as desired.
2:50~1 minPile the seared tofu generously on top, then finish by pouring plenty of the rich sweet-savory sauce over it.
2:59~1 minTop with green onion as desired and add wasabi on the side for a sharp accent.
3:56~1 min
