2
Open the firm tofu, drain off the excess water, and cut it into pieces of your preferred size.
0:32
~2 min
3
Arrange the tofu on a plate and microwave at 600W for 2 minutes without covering. This warms the tofu while driving off moisture.
0:36
~2 min
4
Add sesame oil to a frying pan. Pat the surface of the tofu dry with paper towels before adding it to the pan.
0:48
~2 min
5
Sear the surface of the tofu over high heat until golden. If the pan starts to smoke, it is too hot, so lower the heat to medium and continue cooking.
0:59
~3 min
6
Once it has a nice golden color, flip the tofu and sear the other side.
1:13
~3 min
7
Once the other side is golden as well, turn off the heat once to prevent spattering. Add the prepared sauce, then return the heat to medium and simmer the tofu.
1:39
~3 min
8
After simmering for 2 to 3 minutes, flip the tofu once so the flavor penetrates evenly, and simmer the other side.
1:59
~3 min
9
When the sauce has thickened nicely, flip the tofu one last time and it is done.
2:40
~1 min
10
Mound the steamed white rice slightly high in a donburi bowl and sprinkle katsuobushi over it as desired.
2:50
~1 min
11
Pile the seared tofu generously on top, then finish by pouring plenty of the rich sweet-savory sauce over it.
2:59

Top with green onion as desired and add wasabi on the side for a sharp accent.
