
Copycat Niigata Bus Center Curry
A homemade recreation of Niigata's famous "Bus Center Curry," modeled on the flavor of the retort-pouch version. The signature touches: a quick roux made by simply mixing lard and cake flour for thickening, plus soy milk and Chinese-style soup stock for a mellow tonkotsu-like richness. Because the ingredients are simmered from cold water rather than sautéed, the yellow color of the curry powder comes through as is.

Put the lard in a bowl and melt it in the microwave. Sautéing the roux would brown it and keep it from turning yellow, so make a simple stir-together roux instead.
7:10~2 minAdd the cake flour to the melted lard and mix to make a beurre manié-style roux. It won't clump and can be added later as the thickener.
8:15~2 minBring 150 cc of water to a boil in a pot. Don't sauté the ingredients — simmer everything from cold water.
9:13~3 minWhile the water heats, cut the onion and carrot into large chunks. About 70 g of onion is enough.
9:34~5 minAdd the cut vegetables to the boiling water. Next, cut the pork belly into small pieces and add it to the pot as well.
11:26~2 minAdd 150 cc of soy milk and 1 tablespoon of Chinese-style soup stock. This gives it the mellow richness and depth of a tonkotsu soup.
