Break the bean sprouts into small pieces or chop them.
Skin the chicken breast and cut into 1cm cubes. Optionally chop and add the skin too.
Combine the chicken, egg, chicken stock granules, soy sauce, and potato starch.
Add the bean sprouts and mix to combine.
Heat salad oil and sesame oil in a frying pan over medium heat.
Form the chicken-and-bean-sprout mixture into flat round patties and arrange in the pan.
Cook until browned, flip, then cover and steam-cook over low-medium heat for 3 minutes.
Once browned on both sides, plate up and serve.
