Microwave Cheese Curry Rice
A cheese curry you can make entirely in the microwave, with no simmering required. Butter, sugar, and Worcestershire sauce add richness, and a splash of vinegar at the end sharpens the flavor, giving it a depth you wouldn't expect from microwave cooking. It's quick to make a single serving, so it's great for people living alone.

Instructions
Finely mince the onion. Since it will only be microwaved briefly, it doesn't cook through easily, so chop it as finely as possible.
3:11~3 minCut the pork of your choice into bite-sized pieces.
3:41~2 minPut the minced onion, pork, and water into a heatproof bowl.
Add Worcestershire sauce for richness and spiciness.
Add sugar. Add just a small amount, less for sweetness than for mellowness and richness.
Add butter and a small amount of grated garlic.
Add the store-bought curry roux and mix everything together lightly.
Cover loosely with plastic wrap and microwave at 600 W for 4 minutes.
6:16~4 minRemove the wrap and mix well to dissolve the roux, which will have solidified. The curry thickens as the roux dissolves.
Microwave at 600 W for 1 minute without the wrap to cook off excess moisture and give it a rich flavor.
6:54~1 minAdd just a little vinegar and mix lightly to sharpen the flavor.
Add the shredded pizza cheese, cover loosely with plastic wrap again, and microwave at 600 W for 20 seconds to melt the cheese.
7:52~1 min
