    Place a chicken wing vertically and cut off the tip. Feel for the gap between the bones and it will cut easily.

    Make a cut on the opposite side as well, between the bones. Repeat the same process for all 10 wings.

    Of the thick and thin bones, grip the thin one firmly and scrape the meat down with your fingers to expose the bone.

    Once the meat is scraped away, snap the thin bone outward and pull it out. Remove the bone from all the wings in the same way.

    In a bowl, combine soy sauce, sake, grated garlic, and ginger to make the marinade.

    Add the deboned wings to the marinade and massage it in well.

    Press plastic wrap directly onto the surface, making sure there is no gap between the wrap and the meat, and marinate for 1 hour.
