
Extra-Large Taco Rice-Style Salad Udon (Zero-Carb Noodles)
A taco rice-style salad udon made with zero-carb noodles, so you can pile it high without the guilt. Ground meat seasoned with Worcestershire sauce, ketchup, and chili powder is tossed with plenty of crisp lettuce and tomato. There's no need to boil the noodles—just drain them—so the only step that uses heat is browning the meat. Finish with a drizzle of mayonnaise for a change of flavor.

Shred the lettuce into 1 cm wide strips.
5:49~2 minCut the tomato in half through the middle, then cut into wedges as you would an apple. Cut each wedge in half lengthwise.
6:31~3 minCut the corner off the zero-carb noodle package and drain the water thoroughly through the opening (no colander needed). Use 2 packs for an extra-large serving.
