Cheesy Carbonara Made with Milk

Cheesy Carbonara Made with Milk

A single-serving carbonara made with milk and sliced cheese instead of heavy cream. It comes together in one frying pan, so there's little to wash up, making it a rich pasta you can whip up even on a weeknight after work.

INSTRUCTIONS

Instructions

  1. 1

Bring water to a boil in a pot. Add about 1 teaspoon of salt per 1L of water.

    0:17~5 min
  2. 2

Add 100g of pasta and boil for the time indicated on the package. Make sure the noodles are fully submerged and stir occasionally so they don't stick together.

    0:33~8 min
  3. 3

While the pasta boils, prepare the other ingredients. Cut 2 slices of bacon into 1cm wide pieces.

    1:14~2 min
  4. 4

In a bowl, combine 1 egg yolk, 100cc of milk, and a pinch of salt and pepper, and mix to make the carbonara sauce.

    1:45~2 min
  5. 5

Tear the sliced cheese into pieces, add it to the sauce, and stir just until roughly combined.

    2:23~1 min
  6. 6

Once the pasta is done, turn off the heat, drain it in a colander.

    2:56~1 min
  7. 7

Add 1 teaspoon of olive oil to the pan used for boiling the pasta and heat over medium heat.

    3:21~1 min
  8. 8

Add the cut bacon and fry until browned and crisp.

    3:31~4 min
  9. 9

Add the boiled pasta and toss quickly until coated in the oil.

    4:22~1 min
  10. 10

Add all of the carbonara sauce and mix quickly. As soon as the cheese melts and everything is combined, turn off the heat.

    4:45~2 min
  11. 11

Set the bacon aside and plate the pasta. Stack the pasta in a few batches, twisting your wrist to build it up, then top with the bacon.

    5:28~2 min
  12. 12

Finish with a sprinkle of black pepper.

    6:06~1 min
