An Italian Chef's Black Garlic & Parsley Oil Peperoncino

A delicate aglio, olio e peperoncino made by Cosimo, an Italian chef who dislikes garlic. He removes the germ (animella) from white garlic and pairs it with fermented black garlic, which has a licorice-like aroma, then finishes the dish with a vivid "chlorophyll oil" made by blanching parsley, blending it, and straining it instead of using chopped parsley. He uses hand-drawn spaghetti from Gragnano, and the key is adding a splash of water so the garlic and chili release only their aroma without burning.

Hi, I'm Chef Fabio! "Italian cooking, right now" — with no time lag from Italy. I want to share the world only I can offer, built from a lasting love for Italy and for cooking. For my recipes, I filter the essence of what's really happening in Italy through my own lens, and translate it into something you can recreate at home. I also keep learning as a chef — eating my way around, thinking things through — and that's what lets me bring you food reports where I take a real, honest look at top restaurants on the ground in Italy and at Japan's traditional food culture. I'm still on my own path, still figuring things out as I go. If the version of "what it means to be a chef" that I've found along the way can light a path for young people chasing their own future, that would make me really happy. INSTRUCTIONS

Instructions

  1. 1

Split the white garlic and remove the germ (animella) from the center with a dedicated tool. The germ is the most pungent part of the garlic, so always take it out.

    1:24~3 min
  2. 2

Cut the fresh chili pepper into a fine julienne. Adjust the amount to your preferred heat level.

    1:35~2 min
  3. 3

In addition to the slices, prepare whole garlic cloves to be removed later, and also prepare the fermented black garlic.

    1:44~2 min
  4. 4

Make the parsley oil (chlorophyll). Blanch the parsley and shock it in ice water, then blend it with chilled extra virgin olive oil and pass it through a strainer to extract a vivid green oil.

    2:18~10 min
  5. 5

Start cooking the Gragnano spaghetti in salted boiling water. The package says 10 minutes, but set a timer for 8 minutes and drain it then.

    4:29~8 min
  6. 6

Pour a generous amount of extra virgin olive oil into a frying pan. Use more oil depending on the number of portions you are making.

    4:47~1 min
  7. 7

Add a small amount of parsley stems to the oil to infuse the aroma. Keep it modest so you don't add too much.

    5:04~1 min
  8. 8

Raise the heat a little to bring up the temperature, and once the oil starts to sizzle lightly, add the chili, the whole garlic, and the black garlic in that order.

    5:36~2 min
  9. 9

Once the aroma comes up, add a splash of cooking water and turn off the heat, stopping the cooking so the garlic and chili don't burn.

    6:02~1 min
  10. 10

After 8 minutes, drain the spaghetti and transfer it to the pan, then add a little more cooking water.

    7:42~1 min
  11. 11

Turn the heat back on and mantecare, lightly caramelizing the garlic while tossing the pasta with the cooking water and oil, finishing the pasta to its final doneness. Taste along the way to check.

    8:03~3 min
  12. 12

Plate the pasta and finish by drizzling the parsley chlorophyll oil over the top.

    9:22~2 min
