Tomato-Only Gratin
A simple gratin made entirely with tomatoes, layering fresh tomatoes with a tomato sauce made by simmering and crushing seasonal tomatoes. The sauce gets richness from butter, cake flour, and milk, while a bed of raw tomatoes underneath adds contrast in texture and flavor. Just bake it in a toaster oven for an easy dish.
