
Sichuan-Style Eggplant Twice-Cooked Pork
An authentic Sichuan-style twice-cooked pork made with summer eggplant and a block of pork belly. Eggplant replaces the usual cabbage, soaking up the flavorful fat rendered from the pork belly for a melt-in-your-mouth texture. With the sharp heat of doubanjiang and chili peppers and the tingling numbness of Sichuan pepper, it's a dish that makes white rice disappear.

Lightly crush the garlic scapes with the flat of a knife to release their aroma, then cut them diagonally into 2-3cm lengths.
