
Agedama Tofu Donburi (Tempura Shop Staff Meal)
A dish the head chef at a tempura shop regularly eats as a staff meal. Tofu is simmered in tentsuyu made with 4 parts dashi, 1 part soy sauce, and 1 part mirin, then scallions and agedama are added and the whole thing is bound with egg and served over white rice. You can also make it by diluting store-bought mentsuyu — a super easy recipe that is cheap, fast, and delicious.

Gather the ingredients. Have ready the tofu (firm or silken), the green part of the scallion, egg, agedama, tentsuyu (4 parts dashi, 1 part soy sauce, 1 part mirin; diluted store-bought mentsuyu also works), and white rice.
Chop the green part of the scallion to taste. Since this is one serving, you don't need very much.

Put tentsuyu in a pot to taste and set it over the heat. Diluted store-bought mentsuyu is fine too.
2:08~1 minScoop the tofu roughly with a ladle into the pot, breaking it into suitable pieces.
2:26~1 minSimmer the tofu, and once it comes to a boil, add the chopped scallion.
2:41~3 minOnce the scallion is cooked through, add as much agedama as you'd like to eat.
