Easy No-Fry Microwave Chicken Nanban in a Parchment Parcel
Non-fried chicken nanban made simply by wrapping it in parchment paper and heating it in the microwave. Marinate chicken breast in a sweet vinegar sauce, coat with potato starch and vegetable oil, then microwave. Excess oil and moisture escape, so the chicken turns out plump and tender, and cleanup is easy. Serve with plenty of homemade tartar sauce.

Instructions
Slice 1 chicken breast on the diagonal into 1.5 cm thick pieces, cutting across the grain, and pierce it here and there with a fork.
0:06~5 minIn a bowl, combine the soy sauce, vinegar, sugar, and grated garlic.
0:18~2 minAdd the chicken and marinate for about 15 minutes.
0:26~15 minIn a separate bowl, mix the finely chopped boiled egg and onion with the mayonnaise and salt and pepper to make the tartar sauce.
0:31~5 minPat the marinated chicken dry with paper towels.
0:39~2 minLightly coat both sides with potato starch, then coat all over with 2 teaspoons of vegetable oil.
0:43~3 minPrepare parchment paper and cut it into a 30 cm square.
0:52~1 minFold it along the diagonal, then spread it out on a heatproof plate.
1:00~1 minPlace the chicken on top, keeping the pieces from overlapping as much as possible, bring the near and far corners together, fold them over 3 to 4 times in 1 to 1.5 cm widths, and twist both ends about twice to seal the parcel.
1:05~3 minMicrowave at 500 W for about 3 minutes 30 seconds.
1:16~4 minTake out the heated parcel and open it from the center. Excess moisture escapes, so the chicken turns out plump and tender.
1:22~1 minArrange on a plate, top with the tartar sauce, and it's done.
1:36~2 min
