Golden Hamburg Steak: A Full Copycat Recipe (Test Batch Edition)

A record of test batches recreating Seven Premium Gold's "Kin no Hamburg" at home, analyzed from its ingredient label and close observation of the product itself. The patty is based on a ground beef and pork blend with gelatin, wheat dietary fiber, and egg white added, then cooked at low temperature for a fluffy texture. The sauce starts from canned demi-glace and is reinforced with fond de veau and bouillon for depth, finished by pressing the vegetables through a sieve rather than using a blender.

INSTRUCTIONS

Instructions

  1. 1

Cut the onion into roughly 7-8mm pieces. Cut them slightly large to account for shrinkage after cooking.

    3:27~10 min
  2. 2

Sauté the onion. Don't take it all the way to golden brown; stop just short of caramelized, before it goes limp.

    3:35~8 min
  3. 3

Clean the dirt off the mushroom stem ends, grind the mushrooms in a food processor, and sauté them in vegetable oil.

    3:41~8 min
  4. 4

Knead the ground meat blend thoroughly until sticky. Add the roughly chopped coarse-ground meat (25% of the total meat) and the beef tallow. If the coarse grind is too coarse, grind it finer in a food processor before adding.

    3:55~10 min
  5. 5

Add the sautéed onion and mushrooms, egg white (dried egg white), gelatin, wheat flour, wheat dietary fiber, rice flour, concentrated beef bouillon powder, sugar, salt, and pepper, and mix together.

    3:56~10 min
  6. 6

Shape the mixture, tap it lightly to release air pockets, then chill it in the refrigerator until cooking. Don't flatten it too much or it will shrink; watch the thickness.

    4:09~30 min
  7. 7

For the sauce, press the sautéed onion and mushrooms through a sieve. The original sauce has almost no graininess, so remove as much vegetable body as possible.

    4:16~10 min
  8. 8

Sauté the sieved vegetables in butter, then add the red wine, tomato paste, bouillon, fond de veau, natural cheese, and canned demi-glace sauce.

    4:27~10 min
  9. 9

Reduce the sauce and finish it with caramel coloring for color. Be careful not to reduce it too far and drive off too much liquid.

    4:38~15 min
  10. 10

Grill over direct high heat for 3 minutes, until the surface is crisp and browned. Line the tray with parchment paper.

    5:02~3 min
  11. 11

Place the grilled patty and the sauce in a heatproof bag, press out the air, and seal it.

    5:21~5 min
  12. 12

Cook through in a water bath at low temperature.

    5:29~40 min
