
Spiced Chicken Drumette Curry
A chicken drumette curry made from four spices instead of curry roux. Marinating the drumettes in yogurt keeps them tender even with a short simmering time. Sauteing the onions thoroughly draws out their savory depth, making this an authentic Indian curry enriched by the tang of cherry tomatoes and the stock from the drumettes.

Lightly score the chicken drumettes. This lets the flavor soak in well.
1:28~5 minAdd plain yogurt, soy sauce, grated garlic, and honey to the drumettes, and mix in garam masala if you have it. Cover with plastic wrap pressed against the surface and marinate for at least 2 hours, preferably overnight.
1:43~10 minPrepare the spices. Measure out the four spices: cumin seeds (whole), coriander powder (fresh aroma), turmeric powder (color), and cayenne pepper (heat).
