Roughly chop the napa cabbage.
Salt the cabbage and let it release its water.
Chop the garlic chives (nira).
Squeeze the cabbage to remove the water.
Add salt to the ground pork and knead.
Add the cabbage and nira and mix to combine.
Add lard, garlic, ginger, oyster sauce, soy sauce, pepper, and sesame oil.
Adjust the seasoning.
Chill in the refrigerator.
Wrap the filling in gyoza wrappers.
Freeze.
Pan-fry.
