    Prepare a heatproof dish and spread out half of the 1 bag of bean sprouts, then spread out half of the 200g of thinly sliced pork belly. Layer the remaining bean sprouts and pork alternately on top.

    Sprinkle with a pinch of salt and pepper, then drizzle sake over the top.

    Cover loosely with plastic wrap and microwave at 600W for 5 to 6 minutes, until the pork is cooked through.

    Remove the plastic wrap, mix everything together, and let it cool.

    Trim a little off both ends of the 2 cucumbers, smash them with a rolling pin, and cut them into 3 to 4cm pieces.

    Tear the cucumbers into bite-sized pieces by hand.

    Remove the pit from 1 umeboshi and mince it with a knife.
