Shell and devein the shrimp.
Wash the shrimp with salt and potato starch to remove any dirt.
Lightly pound the shrimp to break up the muscle fibers.
Marinate the shrimp with egg white, salt, sake, and potato starch.
Dissolve grated cheese in hot water and combine with mayonnaise, lemon juice, mustard, doubanjiang, salt, and black pepper to make the sauce.
Combine potato starch, cake flour, baking powder, mayonnaise, and water to make the batter.
Coat the shrimp in the batter and deep-fry.
Toss the fried shrimp with the sauce.
Plate to serve.
