A simple pasta made with nothing but Grana Padano cheese and olive oil, learned by surveying locals in an Italian park. With just three ingredients, you combine the pasta water and cheese and toss everything together in a bowl. Grind black pepper over it at the end for a cacio e pepe feel, or squeeze on lemon to lighten it up for a completely different impression.
Instructions
- Gather the ingredients. Just three: Grana Padano cheese, the pasta of your choice, and olive oil.
- Bring a pot of water to a boil, salt it to about 1% concentration, and cook the pasta.
- The sauce is very simple, so there is no special prep. Get it ready while the pasta cooks.
- Grate the Grana Padano. It is aged for a shorter time than Parmigiano Reggiano and is gentler in saltiness, so it is easier to balance.
- Put the grated cheese in a bowl, add about 40 cc of the pasta water, and mix.
- Since everything is finished in the bowl, be careful not to let it get too watery.
- Add the cooked pasta to the bowl, pour in the olive oil, and toss. When the cheese melts naturally and turns glossy and smooth, it is done.
- Plate and enjoy. The result is quite creamy.
- Grind black pepper over it if you like. The flavor becomes extremely close to cacio e pepe.
- Squeeze lemon over it to change up the flavor. A pasta loaded with cheese and on the heavy side turns light in an instant with lemon.
