Sauté the cured pork belly (pancetta).
Transfer the cooked pasta to the pan to drop the temperature.
Add the egg mixture and stir.
Plate while still hot.

Italian-mainland version: Sauté pancetta and garlic in a frying pan.
Italian-mainland version: Combine the cooked spaghetti with the pancetta.
Italian-mainland version: Add Gruyère while still hot and stir to melt.
