A popular izakaya snack — su-tofu — using firm tofu soaked in a special yukari-based marinade. Simple, but chilled it's exceptional. A perfect accompaniment for drinks at home.

    Halve the tofu lengthwise. More cut surface area lets water drain and flavor soak in faster.

    Wrap the cut tofu in paper towels or a kitchen cloth.

    Place the wrapped tofu in a microwave-safe container, uncovered, and microwave at 600W for 3 minutes.

    Combine vinegar, yukari, sugar, kombu cha, and salt to make the marinade.

    Let the microwaved tofu cool slightly, then transfer to a plastic bag.

    Pour the marinade into the bag, press out the air, and seal.

    Refrigerate overnight.

    Cut into bite-size pieces.

    豆腐は木綿豆腐のほうがおすすめ。絹ごし豆腐でも作れるが難易度が上がる。
