Cut the grilled tofu, onion, shiitake, and long green onion.
In a bowl, combine sugar, water, mirin, and soy sauce to make the warishita (simmering broth).
Heat the frying pan with beef tallow over medium heat.
Sprinkle sugar in the pan and sear the beef.
Coat the beef with the warishita.
Turn off the heat and add the onion, the white part of the long onion, the grilled tofu, and the shiitake.
Pour in enough warishita to nearly cover, and simmer over medium heat.
Add the green part of the long onion.
Once it has reduced, turn off the heat and add the udon.
Drizzle in beaten egg and scatter scallion.
