Make cucumber pickles.
Make apple jam. Cut the apple (skin on) into thirds — grate the middle stem section and dice the rest.
Make the Nordic-style meatballs. Sauté spring onion; mix with ground meat, rice flour, allspice, and mustard, then form into balls.
Make cauliflower mash. Boil cauliflower and combine with sour cream or yogurt and garlic.
In the pan used to cook the meatballs, add soy sauce, red wine, and chocolate to make the sauce.
Pour the brown sauce over the meatballs.
Plate everything as a single one-plate meal.
