Make the kaeshi (return sauce). Combine soy sauce, sake, and water.
Press the homemade soy sauce.
Make the dashi. Simmer the bonito flakes until all the flavor has been extracted.
Make the soba. Mix in bread flour and bring it together with hot water (mizu-mawashi).
Cut the scallop adductor into 4–8 pieces.
Add the scallop pieces to the dashi and let stand until cooked through.
Boil the soba.
Shock the soba in cold water, plate, pour over the broth, and serve.
