Boil water.
Cut the glass noodles in half.
Cook the glass noodles in boiling water for 5 minutes.
Cut the cucumber, carrot, red onion, and ham into matchsticks the same length as the noodles.
Combine the dressing ingredients.
Drain the cooked glass noodles and toss them — still hot — with the dressing.
Once the noodles cool slightly, add the cut vegetables and ham and toss.
Lightly toast the sesame seeds in a frying pan.
Add the toasted sesame to the noodle salad and toss.
Chill in the fridge to finish.
