Browned Butter Soy Sauce Grilled Corn Rice

Browned Butter Soy Sauce Grilled Corn Rice

Grilled corn rice cooked in a rice cooker, fragrant with shiso leaves. The corn cob and shio kombu are cooked together with the rice to infuse it with umami and a sweet aroma, and at the end you fold in grilled corn simmered with mirin, soy sauce, and butter until lightly browned and fragrant. The fresh scent of chopped shiso leaves keeps the finish light — a perfect mixed rice dish for summer.

INSTRUCTIONS

Instructions

  1. 1

Remove the husk from around the corn. The silk is edible, so you can cook it with the rice if you don't mind it.

    2:36~2 min
  2. 2

Cut the corn in half with a knife. It is hard, so watch your hands.

    3:11~2 min
  3. 3

Stand the corn upright and scrape the kernels off around the cob with a knife. Angling the knife slightly toward the cob (inward) removes them cleanly. Do not discard the cob — set it aside.

    3:23~5 min
  4. 4

Put 2 go of washed and drained rice into the rice cooker, then add a little soy sauce and mirin. Add the shio kombu as well.

    4:44~2 min
  5. 5

Add water up to the 2-go line, mix well, add the corn cob, and let it soak in the refrigerator for 30 minutes to 1 hour.

    5:45~45 min
  6. 6

Heat vegetable oil in a frying pan over medium heat, add the corn kernels and a little salt, and stir-fry over medium heat until lightly browned.

    8:19~5 min
  7. 7

Once browned, add the mirin, soy sauce, and butter, and stir-fry over medium heat until the seasonings reduce, brown slightly, and give off a toasty aroma.

    9:35~3 min
  8. 8

Turn off the heat and add the water, scraping up the browned bits from the bottom of the pan with a rubber spatula and coating the corn with them. The grilled corn is done. Set it aside.

    10:25~2 min
  9. 9

Set the soaked rice in the rice cooker and cook it on quick-cook mode.

    11:33~40 min
  10. 10

While the rice cooks, finely chop the shiso leaves.

    13:05~3 min
  11. 11

When the rice is done, remove the corn cob, add the chopped shiso leaves and the grilled corn, and fold together with a cutting motion.

    13:44~2 min
  12. 12

    Serve in bowls and enjoy.

    14:22~1 min
