
Shawarma (Egyptian-Style Chicken Shawarma)
A chicken shawarma that recreates the street-stall flavors encountered in Egypt using a home frying pan. Chicken thighs marinated in yogurt seasoned with coriander, cumin, turmeric, paprika, cinnamon, and cardamom are seared until fragrant, cut into bite-sized pieces, and stuffed generously into bread along with sauteed onion, cucumber, and tomato. A homemade yogurt sauce with a kick of mustard brings a refreshing balance to the spicy meat.

Combine the spices. Mix the coriander powder, cumin, turmeric, paprika, and cinnamon, then add just a tiny bit of cardamom at the end.
1:31~3 minMake the marinade for the chicken thighs. In a bowl, add the yogurt, 1 clove of garlic, the combined spices, and 30-40 grinds of black pepper, squeeze in plenty of juice from half a lemon, and drizzle in 2-3 turns of olive oil.
2:58~5 minAdd the chicken thighs, add 10 pinches of salt (about 1.2% of the meat's weight), and rub it in thoroughly. Season a little heavily since there are many spices.
