Quickly rinse the azuki beans.
Place the azuki and water in a pot and bring to a boil.
Once boiling, simmer over medium heat for about 5 minutes.
Turn off the heat, cover, and let steep for about 10 minutes.
Discard the cooking water (shibu-kiri).
Place the azuki and 1500ml fresh water in the pot and turn the heat to high.
Once boiling, reduce to low, place a drop-lid on top, and simmer for about 1 hour. Add water as it cooks down.
When the azuki are soft enough to crush between your fingers, add sugar and salt.
Once the sugar and salt dissolve, simmer for about 10 more minutes.
Add toasted mochi to the zenzai and serve.

大人のぜんざいには、ブランデーやラム酒を少し加えるのもおすすめ。
