Bad Boy's Napolitan Rice Loop 1
Cut off the tip of the onion, make a shallow cut, and peel off the skin. Halving it lengthwise makes peeling easier, but don't halve it this time since you'll cut it differently. Onion 1 piece

2
Lay the onion on its side and cut a 1cm-thick round from the middle. Hollow out the center and keep just the outer ring (it will be used as a mold for the fried egg). Finely chop the remaining onion. 3
Cut the sausage into rounds of a suitable thickness. Using a strongly smoked type brings out more aroma. 4
Trim off the soil-covered ends of the mushrooms and cut them into bite-sized pieces. Add the stems as well, using every part. 5
Heat a frying pan, melt 10g of butter, place the cut onion ring in it, and gently drop the egg inside the ring. Cook over low heat. 6
Since the top cooks slowly, spoon the melted butter over it to set the white. Repeat until it reaches your preferred firmness, and once it starts to set, season with salt and pepper. 7
It will continue cooking from residual heat, so remove it just before it reaches your preferred firmness and set it aside. A runny yolk is best. 8
Stir-fry the finely chopped onion in the butter left in the pan, and once the butter coats it, sprinkle lightly with salt. When the onion turns translucent, add the sausage and mushrooms and stir-fry briefly. 9
Clear a space in the pan, add about 4 tablespoons of ketchup, spread it thin, and reduce it to cook off the moisture. The acidity mellows and the umami concentrates. Once reduced, toss it together with the ingredients. 10
Add a small amount of Worcestershire sauce as well. It contains plenty of spices, so it adds depth of flavor. 11
Add the rice and stir-fry, pressing it down with the back of a ladle to sear it, and coat it with the sauce. Taste and adjust the seasoning with salt and pepper. 12
Serve on a plate, top with the onion fried egg, and finish by sprinkling parsley. Change up the flavor with Tabasco or grated cheese as desired. 1 Step 1 Cut off the tip of the onion, make a shallow cut, and peel off the skin.
