
Chef Hara of Al Ponte's Carbonara (Classic & Creamy Variations)
An authentic carbonara taught by Chef Hara of Al Ponte, an Italian restaurant with 35 years of history. Using homemade pancetta and pecorino, and mixing the egg yolk, cheese, and water persistently to emulsify, the sauce comes out remarkably glossy. The classic version uses only egg yolks for a bold, rich flavor, while the variation uses whole eggs and Grana Padano for a creamy finish. The key is to keep mixing to bind the fat.

Slice the homemade pancetta. It will have fattier and leaner parts, and the end pieces are especially good. Use it in a dry state.

1:57~1 minCrush the garlic, put it in a frying pan, and infuse the oil with its aroma. Rather than coloring it, what matters is letting it bubble well so the aroma transfers to the oil.
2:05~2 minMeanwhile, add the pecorino to the egg yolks in the bowl and mix well, then add water and keep mixing persistently. Emulsify until it turns slightly white, dissolving the fat thoroughly.
2:21~5 minCook the pancetta in the frying pan and make use of the flavorful fat that renders out. Be careful not to rush it over high heat, or the fat won't taste good. Once cooked, remove it and set aside.
