Wash the orange peel with detergent to remove wax. Avoid the white pith and slice into matchsticks for orange peel.
Score the spareribs.
Dust the spareribs with potato starch.
Mix the spareribs with the seasonings and marinate for 30 minutes to overnight.
Arrange the spareribs on a plate and pour the marinade over them.
Steam over high heat with a steamer producing steam for 20 minutes.
Top the steamed spareribs with the orange peel.
