    Peel the daikon thickly. Cut a 10 cm length and slice it into 2 cm thick half moons.

    Arrange the daikon on a heatproof plate, add 1-2 tablespoons of water, cover loosely with plastic wrap, and microwave at 600 W for 6 minutes.

    Slice the narutomaki 7-8 mm thick and cut the leek into thin rounds.

    In a pot, combine 3 cups of water, instant dashi, sugar, mirin, and soy sauce to make the broth.
