Cut and divide the vegetables and meat.
Sauté the vegetables in oil.
Add the bay leaf (cook a no-bay-leaf version side-by-side for comparison).
Sear the meat to a deep brown.
Add red wine and reduce well.
Transfer to a stewing pot. Add bouillon, sugar, ketchup, and Worcestershire sauce.
Simmer for 40 minutes.
Add the sautéed onion and simmer 10 more minutes.
Thicken with a brown roux made from cooked flour and butter.
