Combine bread flour and cake flour.
Dissolve salt and baking soda in water; add about 80% of it to the flour and stir to combine.
Rest about 5 minutes, then bring the dough together. If it's too firm, add more water.
Place the dough in a plastic bag and tread on it. When it stretches, fold and tread again. Repeat 3 times.
Rest the dough.
Divide into 4 portions and roll out lightly with a rolling pin.
Pass through a pasta machine, adjusting the roller width and feeding it through several times.
Halve the rolled-out dough and dust with flour.
Attach the cutter and feed the dough through.
Rest the noodles overnight.
Render pork back fat over high heat to make the broth.
Boil the noodles for about 1 minute.
Top with scallion to serve.
