Microwave the potato.
Stir-fry the vegetable mix over high heat and season with salt and pepper.
Snip the chicken thigh into pieces with kitchen shears.
Make a chicken paitan-style soup with the chicken thigh, ginger, and grated garlic (low heat).
Make potato-mochi from the microwaved potato.
Combine the potato-mochi and stir-fried vegetables into the chicken paitan soup.
Stir the miso into the soup.
Add soy sauce and drizzle with sesame oil.
Finish with yuzu kosho or sansho pepper to taste.
